
Honey Turkey Breast in a Bacon Wrap

- 2.5 kg turkey breast fillet (skinless)
- 0.5 kg sliced bacon
- 225 + 110 grams honey
- 225 ml apple cider vinegar
- 2 tablespoons freshly ground pepper
- 0.25 teaspoon cayenne pepper
Przygotowanie
- Preheat your charcoal grill to 135°C.
- Mix together the apple cider vinegar, 110 grams of honey and the cayenne pepper.
- Using a marinade injector, inject the above marinade into the turkey breast.
- Make a bacon wrap from the bacon slices by laying the slices perpendicular over each other and weaving them under one another in a lattice.
- Place the turkey breast on the bacon mat, wrap it up and turn it so the edges of the bacon are on the underside.
- Place the turkey breast in the grill and smoke for 2 hours.
- Mix the remaining honey with the freshly ground pepper.
- After two hours, pour half of the honey glaze over the bacon-wrapped turkey breast.
- Smoke for a further 1 hour, or until the internal temperature reaches 75°C.
- Remove the turkey from the smoker, rest for a few minutes, then serve warm.
