
Turkey Skewers with Extras

Ingredients
- 1 kg turkey breast fillet
- 2 tablespoons BBQ spice blend
- 1 cup BBQ sauce
- 1 tablespoon oil
- 15-20 jalapeño pepper slices
- 10-12 bacon slices
- 15-20 cheese cubes
- 8 metal or bamboo skewers
Method
- If using wooden skewers, soak them in water for 20-30 minutes before use.
- Preheat the kamado grill to 175°C, insert the deflectors and set up for indirect cooking.
- Cut the turkey breast into about 2.5 cm pieces.
- Put the meat cubes in a bowl, pour over the oil and mix thoroughly with the BBQ spice blend.
- Cut the longer bacon slices in half. Place a cube of meat, a cube of cheese and half a slice of jalapeño on a piece of bacon, wrap the bacon around it and thread it onto the skewer. Put 3-4 bacon bombs on each skewer.
- Place the skewers on the grill. Brush with barbecue sauce every 15 minutes. Grill for 25-30 minutes, or until the bacon is crispy and the internal temperature of the turkey reaches 75°C.
- Take off the grill, let rest for a few minutes, then serve hot with salad and extra barbecue sauce for dipping.
