Zutaten

  • 2 kg pork belly
  • 70 g BBQ spice rub
  • 200 g BBQ sauce
  • 60 g brown sugar
  • 50 g honey
  • 200 g butter
  • 100 g dark soy sauce

Zubereitung

  1. Remove the skin from the pork belly and cut it into 5×5 cm cubes, then rub it thoroughly with the rub. Keep the smoker at 130°C grate temperature. Use apple smoking wood.
  2. Cook until the belly cubes turn a mahogany color.
  3. Place them in a baking tray, add the butter, then sprinkle with the brown sugar and the honey, and pour the soy sauce over.
  4. Cover the tray with aluminum foil.
  5. Return it to the smoker at 130°C. Cook for another two hours. Once butter-tender, pour off a little of the fat, then stir in the BBQ sauce. Return it for 20 minutes.
  6. Rest for 10-15 minutes.
