
Pork Belly Burnt Ends

Zutaten
- 2 kg pork belly
- 70 g BBQ spice rub
- 200 g BBQ sauce
- 60 g brown sugar
- 50 g honey
- 200 g butter
- 100 g dark soy sauce
Zubereitung
- Remove the skin from the pork belly and cut it into 5×5 cm cubes, then rub it thoroughly with the rub. Keep the smoker at 130°C grate temperature. Use apple smoking wood.
- Cook until the belly cubes turn a mahogany color.
- Place them in a baking tray, add the butter, then sprinkle with the brown sugar and the honey, and pour the soy sauce over.
- Cover the tray with aluminum foil.
- Return it to the smoker at 130°C. Cook for another two hours. Once butter-tender, pour off a little of the fat, then stir in the BBQ sauce. Return it for 20 minutes.
- Rest for 10-15 minutes.
