
Italian-Style Chicken Skewers on the Grill

- 600 grams chicken breast fillet
- 1 bell pepper (red)
- 1 bell pepper (yellow)
- 1 onion
- 200 grams cherry tomatoes
- 2 tablespoons fresh basil (finely chopped)
- 2 cloves crushed garlic
- 4 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon dried oregano
- 0.5 teaspoon dried thyme
- salt to taste
- freshly ground pepper to taste
- wood or bamboo skewers

- Make the marinade: In a medium bowl, mix together the finely chopped basil, the crushed garlic, the olive oil, the balsamic vinegar, the oregano, the thyme, the salt and the pepper.
- Marinate the chicken: Add the chicken cubes to the marinade and toss thoroughly to coat all over. Cover the bowl and place in the fridge for at least 30 minutes.
- Assemble the skewers: Thread the chicken cubes onto the skewers, alternating with the bell pepper cubes, the onion wedges and the cherry tomatoes.
- Prepare for grilling: Preheat the grill to medium heat. Clean the grill grate and lightly oil it.
- Grilling: Place the chicken skewers on the hot grill grate. Grill them for about 4-5 minutes per side.
- Serving: Take the finished chicken skewers off the grill and serve fresh.
