Salmon and Pancetta Sandwich with Avocado

  • 350 g salmon fillet
  • 2 mini baguettes
  • 1 avocado
  • 1 handful arugula
  • 2 teaspoons olive oil
  • 6 slices pancetta
  • 1 tablespoon lemon pepper spice mix
  • 1 tomato
  • 1 tablespoon chili crisp
  • 6 tablespoons mayonnaise

Εκτέλεση

  1. Preheat the grill to 200°C and put on the soapstone.
  2. Lightly oil the surface of the stone, then place the pancetta slices on it.
  3. Season the salmon slices with the lemon pepper spice mix.
  4. Place the fish on the stone and cook the salmon under a closed lid.
  5. While the fish is cooking, slice the avocado and the tomato.
  6. Mix the mayonnaise with the chili crisp.
  7. Cut the baguettes in half, then toast them in the pancetta fat.
  8. When the salmon is cooked and the bread is toasted, assemble the sandwiches.
  9. Brush both sides of the baguette with the chili aioli.
  10. Top with the fried pancetta, then the salmon, the avocado and finally the arugula.
  11. For easier eating, cut the sandwich in half.
