  • 0.5 kg white fish
  • 1 cup breadcrumbs
  • 1 tablespoon fresh parsley
  • 1.5 tablespoons Dijon mustard
  • 2 eggs
  • 1 tablespoon lemon juice
  • 0.25 cup mayonnaise
  • 0.5 onion (diced)
  • 3 teaspoons fish spice mix
  • 1 bell pepper (red, diced)
  • 1 teaspoon Worcestershire sauce
  • salt and pepper to taste

  1. Preheat the grill to 110°C and insert the deflectors to prepare the grill for indirect grilling.
  2. Pat the fish fillets dry with paper towels, then season both sides with about one teaspoon of spice mix.
  3. Place the fish fillets on a grill plate, pan or aluminum foil tray and put it in the grill. Cook the fish for 35-40 minutes, until the fillets are completely cooked through.
  4. Remove the fish from the grill and let them cool slightly, then shred the meat into small pieces with a fork.
  5. In a large bowl, mix the fish, beaten eggs, pepper, onion, breadcrumbs, mayonnaise, Dijon mustard, lemon juice, parsley, Worcestershire sauce and the remaining 2 teaspoons of spice mix. Mix until you get a homogeneous mass.
  6. Form 6-8 patties from the mixture, depending on how large/thick you want them. Then refrigerate for 30 minutes to firm up.
  7. Meanwhile, preheat the grill to 190-200°C.
  8. Place aluminum foil, a pan or a grill plate on the grill, then lightly brush the surface with oil so it doesn't stick. Place the fish patties on the grill and cook both sides with the lid open for 3-5 minutes, or until golden brown and crispy.
  9. Once both sides of the patties have browned, remove them from the grill and serve immediately.
