Grilled Shrimp Skewers

  • 25-30 cleaned shrimp
  • 1 bell pepper (red)
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 2 tablespoons butter or margarine
  • 2 tablespoons fresh parsley (finely chopped)
  • 3 cloves crushed garlic
  • 6 green onions (cut into larger pieces)
  • 0.25 cup dry white wine
  • 0.25 teaspoon ground pepper

Przygotowanie

  1. Thaw the shrimp if frozen. Remove the shell and the vein running along the shrimp.
  2. In a small pan, combine the butter and oil. Add the garlic and heat together over medium heat for 2 minutes, then remove from the heat.
  3. Stir in the wine, parsley, lemon juice and black pepper; set aside.
  4. Thread the shrimp, green onion pieces and pepper pieces onto eight skewers (soak wooden/bamboo skewers in water for 30+ minutes).
  5. Brush the skewers with half of the garlic mixture.
  6. Grill the skewers on the grate over medium heat for 6-8 minutes, turning once and brushing with the garlic mixture halfway through grilling.
  7. Remove from the grill, serve warm and drizzle with the remaining garlic mixture.
