
Grilled Shrimp Skewers

Zutaten
- 25-30 cleaned shrimp
- 1 bell pepper (red)
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 2 tablespoons butter or margarine
- 2 tablespoons fresh parsley (finely chopped)
- 3 cloves crushed garlic
- 6 green onions (cut into larger pieces)
- 0.25 cup dry white wine
- 0.25 teaspoon ground pepper
Zubereitung
- Thaw the shrimp if frozen. Remove the shell and the vein running along the shrimp.
- In a small pan, combine the butter and oil. Add the garlic and heat together over medium heat for 2 minutes, then remove from the heat.
- Stir in the wine, parsley, lemon juice and black pepper; set aside.
- Thread the shrimp, green onion pieces and pepper pieces onto eight skewers (soak wooden/bamboo skewers in water for 30+ minutes).
- Brush the skewers with half of the garlic mixture.
- Grill the skewers on the grate over medium heat for 6-8 minutes, turning once and brushing with the garlic mixture halfway through grilling.
- Remove from the grill, serve warm and drizzle with the remaining garlic mixture.
