Grilled Chicken Breast Cowboy Style

Ingredients

  • 4 chicken breast fillets
  • 4 tablespoons of your favorite grill spice blend
  • 0.25 cup jalapeño pepper (diced, seeded)
  • 1 cup cheddar or trappista cheese, diced
  • 0.5 kg sliced bacon

Method

  1. Preheat your grill to 175°C.
  2. Cut a pocket lengthwise into each chicken breast, fill with jalapeño and cheese slices, then close the pocket and wrap with bacon.
  3. Season the finished cowboy chicken breasts with your favorite grill spice.
  4. Grill the wrapped chicken breasts for about one hour, or until the internal temperature of the meat reaches 75°C.
  5. Take the meat off the grill, rest covered for 5-10 minutes, then serve hot.
