
Memphis-Style BBQ Ribs

Ingredients
- 4 racks of pork ribs
- 150 g BBQ spice rub
- 2.5 dl apple juice
- 120 ml oil
- 120 ml red wine vinegar
Method
- Preheat the kamado grill to 120°C.
- Add 2-3 larger pieces of fruit wood to the charcoal for a pleasantly smoky flavor.
- Place a dish under the grate to catch the dripping juices and leftover basting sauce.
- Prepare the ribs: remove the bluish membrane from the meat, but keep them whole.
- Season the meatier side of the ribs with 2-3 tablespoons of BBQ rub, then place them on the grill with this side facing up.
- Cook with the lid closed for 90 minutes.
- Meanwhile, mix together the ingredients for the basting sauce. Combine the apple juice, wine vinegar and oil with the remaining spice rub.
- When the 90 minutes are up, brush the ribs with the sauce, then return them to cook.
- Repeat this every half hour until the meat is flavorful and tender. This may take up to another 3 hours.
- To check the texture of the meat, you can use the bend test.
- After resting, slice and sprinkle once more with a little BBQ rub before serving.
