Memphis-Style BBQ Ribs

  • 4 racks of pork ribs
  • 150 g BBQ spice rub
  • 2.5 dl apple juice
  • 120 ml oil
  • 120 ml red wine vinegar

Przygotowanie

  1. Preheat the kamado grill to 120°C.
  2. Add 2-3 larger pieces of fruit wood to the charcoal for a pleasantly smoky flavor.
  3. Place a dish under the grate to catch the dripping juices and leftover basting sauce.
  4. Prepare the ribs: remove the bluish membrane from the meat, but keep them whole.
  5. Season the meatier side of the ribs with 2-3 tablespoons of BBQ rub, then place them on the grill with this side facing up.
  6. Cook with the lid closed for 90 minutes.
  7. Meanwhile, mix together the ingredients for the basting sauce. Combine the apple juice, wine vinegar and oil with the remaining spice rub.
  8. When the 90 minutes are up, brush the ribs with the sauce, then return them to cook.
  9. Repeat this every half hour until the meat is flavorful and tender. This may take up to another 3 hours.
  10. To check the texture of the meat, you can use the bend test.
  11. After resting, slice and sprinkle once more with a little BBQ rub before serving.
