Grilled Tilapia with Roasted Tomatoes

Zutaten

  • 2 tilapia
  • 1 red onion
  • 3 lemons
  • 4 cloves garlic
  • 100 ml olive oil
  • 15 cherry tomatoes
  • 20 g Parmesan cheese
  • 5 g dill
  • salt to taste
  • pepper to taste

Zubereitung

  1. Preheat the kamado grill to 200°C and insert the half-moon grate system. The fish is cooked on one side of the grill while the tomatoes roast on the other.
  2. Cut the tomatoes in half and drizzle with 2 tablespoons of oil.
  3. Then season with salt and pepper, set aside and place on the grill at the same time as the fish, since they need about the same amount of time.
  4. While the grill is heating, wash the fish. Pat off the excess moisture. If you have already cleaned, scaled fish that is cut open at the belly, all you have to do is score both sides a few times.
  5. Brush the fish generously with half of the oil, then season with salt and pepper. Rub the inside with garlic.
  6. Slice one lemon and the onion. Chop half of the dill, then stuff these inside the fish as well. Close the stuffed pockets with toothpicks or bamboo skewers.
  7. Place the fish on one side and the vegetables on the other and cook under a closed lid for 10 minutes.
  8. Turn the fish halfway through, and in the last 3 minutes sprinkle Parmesan cheese on the tomatoes so it has time to melt.
  9. Squeeze the juice of the remaining lemons and add the crushed garlic. Finally, finely chop the remaining dill and mix it in along with the olive oil.
  10. Serve the fish with the tomatoes and drizzle with the dill-lemon dressing.
