
Smoked Salmon with Bourbon Glaze

Ingredients
- 1 kg salmon fillet
- 1 tablespoon brown sugar
- 120 ml maple syrup
- 1 tablespoon soy sauce
- 2 tablespoons bourbon
- 1 tablespoon Dijon mustard
- 1 tablespoon salt
- 1 teaspoon pepper
- 1 teaspoon red pepper flakes
Method
- Preheat the charcoal grill to 105°C.
- Add a larger piece of apple or cherry smoking wood.
- Pat the salmon dry with paper towels.
- In a small bowl, mix the brown sugar, pepper and salt.
- Let the fish come to room temperature.
- Place skin-side down on the preheated grill.
- Smoke under a closed lid for 45 minutes.
- In a pot, warm together the maple syrup, mustard, soy sauce, bourbon and pepper flakes.
- After 45 minutes, brush with the glaze every 10 minutes.
- Cook until the internal temperature reaches 60°C.
- Rest for at least 5 minutes before serving.
- Serve with fresh salad or rice!
