Smoked Salmon with Bourbon Glaze

Zutaten

  • 1 kg salmon fillet
  • 1 tablespoon brown sugar
  • 120 ml maple syrup
  • 1 tablespoon soy sauce
  • 2 tablespoons bourbon
  • 1 tablespoon Dijon mustard
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1 teaspoon red pepper flakes

Zubereitung

  1. Preheat the charcoal grill to 105°C.
  2. Add a larger piece of apple or cherry smoking wood.
  3. Pat the salmon dry with paper towels.
  4. In a small bowl, mix the brown sugar, pepper and salt.
  5. Let the fish come to room temperature.
  6. Place skin-side down on the preheated grill.
  7. Smoke under a closed lid for 45 minutes.
  8. In a pot, warm together the maple syrup, mustard, soy sauce, bourbon and pepper flakes.
  9. After 45 minutes, brush with the glaze every 10 minutes.
  10. Cook until the internal temperature reaches 60°C.
  11. Rest for at least 5 minutes before serving.
  12. Serve with fresh salad or rice!
