- 3.5 kg pork shoulder (whole)
- 4 tablespoons brown sugar
- 2 tablespoons salt
- 2 tablespoons freshly ground pepper
- 2 tablespoons ground sweet paprika
- 1 tablespoon chili powder
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 0.5 tablespoon cayenne pepper

- Preparation and seasoning: Preheat the charcoal grill to 120°C. Set it up for indirect cooking. Mix the dry spices together, then rub the meat all over with it.
- The smoking phase: Place the meat on the grill with a tray. Allow about 1 hour of cooking time per half kilogram. Use a meat thermometer to check that the thickest part reaches 74°C.
- The wrapping phase: Pour off the meat juices from the aluminum tray. Place the meat on heavy-duty aluminum foil, then drizzle 50-60 ml of the meat juices over it. Seal it completely with a double layer of foil.
- Finishing and resting: Return the wrapped meat to the grill. Cook until the internal temperature reaches 90°C. Rest for 10-15 minutes, then pull it apart into strands using two forks.
