
Festive Stuffed Pork Loin

- 70-90 dkg pork loin
- 2 tablespoons BBQ dry rub
- 1 tub cream cheese
- 1 jalapeño pepper (diced, seeded)
- 1 cup fresh spinach (finely chopped)
- 20 dkg ground pork
- 0.5 tablespoon garlic powder
- 0.5 tablespoon onion powder
- salt and pepper to taste
- 1 cup grated cheese (e.g. pepper jack), served separately
Εκτέλεση
- Preheat the Kamado grill to 120°C.
- Butterfly the pork loin open.
- Mix the ground pork filling with the cream cheese, spinach, jalapeño and spices.
- Layer the filling and the cheese over the meat.
- Roll it up and tie it.
- Apply the dry rub all over.
- Grill for 2-3 hours until the internal temperature reaches 70-75°C.
- Rest for 15-20 minutes, then slice and serve with roasted vegetables.
