
Pork Ribs in Pineapple-Rum Marinade

- 2 kg pork ribs
- 3 tablespoons spicy BBQ sauce
- 3 tablespoons onion dry rub
- 2 tablespoons grated coconut
- 220 g pineapple
- 2 tablespoons brown sugar
- 30 g butter
- 2 tablespoons dark rum

- Start lighting the kamado grill with larger pieces of charcoal and stabilize the temperature at 165-170°C.
- Insert the deflector and the grate. For flavor, add a little hickory smoking wood to the charcoal.
- Prepare the ribs: remove the membrane and cut off the thin, protruding parts.
- Rub the meat thoroughly with the dry rub of your choice, rich in flavor but definitely strong in onion.
- Place it on the grill meat-side down for the next 45 minutes.
- While the meat cooks, prepare the marinade: purée the pineapple and mix it with the sugar, butter and rum.
- Brush the meat thoroughly with the rum-pineapple marinade on both sides.
- Wrap it in parchment paper and cook for another 30 minutes.
- As the final phase, unwrap the meat and let it caramelize for 20-30 minutes.
- Take it off and let it rest before slicing.
- Finally, cut into smaller pieces and serve alongside mashed potatoes.
